Mango Dressing Ingredients

1-2 limes, zested and juiced
1/2 cup diced ripe mango
1 teaspoon minced seeded jalapeno
2 tablespoons fat free zesty Italian dressing
2 tablespoons fresh orange juice
2 tablespoons honey
2 teaspoons apple cider vinegar
1 teaspoon Dijon mustard
1/2 teaspoon sea salt

1/4 teaspoon ground pepper
Salad Ingredients
3 1/2 cups chopped romaine

2 cups chopped red leaf lettuce

1 cup navel orange segments (about 2 large oranges)
1 cup salad shrimp, or 2 cups cooked medium shrimp, peeled and deveined

1 avocado; peeled, pitted and sliced

1/4 cup red onion; chopped in half and thinly sliced
1/8 cup chopped almonds, toasted

1/2 cup diced sweet mango

 

1. In a small blender combine the zest of one lime plus 1 tablespoons juice, add the remaining dressing ingredients and process until smooth.

2. Add shrimp to dressing; toss to coat. Let stand for 15-30 minutes. Drain reserving the dressing.

3. In a medium mixing bowl combine the shrimp with remaining salad ingredients (all but the nuts). Arrange mixed salad on a serving platter or individual serving plates and drizzle with desired amount of reserved dressing. Garnish with nuts and enjoy! (Yields approximately 8- one cup servings. Drizzle each serving with approximately 1 tablespoon dressing.)
